uk size cucumber x1, spring onion ½ bundle, fresh garlic clove x5big ones, red chili flake 1tablespoon, coriander 20g or more, wood ears (not essential), sesame oil 2 teaspoon, vinegar 3 tablespoon, soy source 2 tablespoon( depends on your taste, if not salty enough add more), white sugar 1½ teaspoon.
1. Bash the cucumber with broad heavy knife and cut into around size 2 x 2 cm chunks or similar, keep all the side walls as uneven as possible, put in a big container easier for mix. If not have broad heavy duty knife can chop it like shredded but will be a different style dish.
2. Bash the garlic to flat then use the back of the knife to make them 1.5 cm chunks again preserve the rough uneven sides as possible, put into the container over the cucumber.
3. Chop the spring onions diagonally around 1-2 cm wide, add in the container.
Add all the rest seasonings into the container and stir and mix properly. Leave it set for 5 minutes or 10, Serve and enjoy J
